Oatmeal Pancakes

Now they don’t compare to a pancake house pancake. But I ahve tries a few recipes for oatmeal based pancakes adn thsi is my favorite. I pour a bit of no-sugar addes syrup, or maple syrup. Fruit would be good too.

1/2 cup oats, grounded

4 egg whites, OR two white and 2 TBSP milk

1/4 tsp. baking powder

2 TBSP Splenda

1/8 tsp vanilla, or maple extract..maybe almond would be good. Or 1/2 or more tsp cinnamon to taste.

Mix all up and cook in pan sprayed with olive oil.

Serves 2

Weight-Loss Envy

Now, I have not had much of an issue being on the receiving end of this phenomenon….yet. But I shamefully admit to have felt it. I have read where people feel that following weight-loss, some friends become distant, maybe even cold. They begin to separate from the person who is making healthy changes. They might even become a little mean. I have not been rude, but I will admit to avoidance. I can only speak to the situation is both friends were once over weight. I know it happens to people who are different sizes. But this is not my case, so I can’t speak to that.

The easy answer is jealousy. In one sense this is true. I believe however, that unless the weight-loss person has changed personalities, it has more to do with shame. The differences may be subtle but they are there. I have experienced a feeling of shame with a friend who has changed their body. Shame that I have not come as far, shame that they are more successful than I have been. Shame that I have not yet “got it” like they have. When your friend has lost weight, and when you hang out, feelings of how different your sizes are now is over-whelming. It can be especially horrible if the friend who’s now small wants to shop. Who probably can shop in stores you can’t. Or walk faster, or get more attention. As unfair as it seems to the skinny person, to the still over weight person, it shines a spot-light on all your insecurities and hang-ups.

It is NOT about you, though we may not say it, we are proud as hell of you. We still care, let us just work through these issues. We know you don’t deserve it, but don’t be too harsh. You remember what it is like while still over-weight.

A couple of suggestions:

When you call, lets talk about things non-body related.

Unless we ask for advice, do not give it. Were probably not ready to hear your valuable knowledge.

I ate healthy all but one meal. Once a summer we head to a delish fish and chips place. Today was the day. Probably was 2 cheat meals due to the size. Back to healthy eats only for rest of week Here’s a weird thing. Although the meal was so good, I cannot wait to get back to wholesome clean foods. What the hell is up with that!

Egg Dish

If you have a Sobey’s in your area I would highly recommend their chicken meatballs (I’ll find official name tomorrow as I am all out) They have a bit of cheese in the middle and are high protein low-fat. About 100 calories for four. I have had them in a variety of ways. Spaghetti sauce over them with steamed veggies; Dipped in a bit of sweet and sour sauce; but the best was this weekend. I have been trying many chicken or veggie sausages to get that great taste without the fat. I cut each of 4 meatballs in quarters and microwaved them for the time on the box. I then mixed 1 egg and 3 whites, dumped-it into a heated pan with dried onion. I then sprinkled in my chopped meatballs and a smidgen of lite a. I cook my omelette’s more like frittata. I cook them on 3 or 4 (medium-low), I cover them with whatever will fit over my pan (cookie sheet or whatever) and cook till its brown on bottom and set on top. If I try to slip this it all breaks apart, but still tastes awesome. This was one of the best egg based meals I have had in ages.

Hypnosis?


I have been doing alot of thinking about what finally makes weight loss “take”. Alot of people when asked about their success say “I REALLY wanted it this time.” I have REALLLYY wanted it many, many times. I have feverishly started diets and workout programs with all the determination I could muster. And it lasted…..for 2 -3 weeks. Gradually I weakened. Something happened, either emotionally, or I attended a party, or I had a treat day. It was the beginning of the end.

I think it is a great mystery why during one magical attempt of the hundreds before,  people succeed. I have been asking myself this question, as I have been successful for a couple of months straight. I have concluded it is a combination of a three things.

1) A decent, realistic program. A healthy, clean, great tasting eating plan.One that I can learn to stay on for life and enjoy. A cardio and weight training program I believe in and is laid out very cleary in how I proceed and develop.

2)Enough Is enough. I asked myself how many years I have wasted dieting, being fat, restarting. Then I forgave myself for that. Imagine treating yourself gently…..what a concept. I also decided deep down I am doing this program as a new part of my life, not 3 months.

3) One difference is that every night I listen to a self -hyonosis tape on weight loss. I don’t know if it is a coincidence or not, but I feel stronger than ever.

If anyone else has concluded what makes them “stay on the program”, what is that one motivating thought, emotion, conclusion. I’d love to hear about it.

Yes, You CAN have chocolate

I have never understood any diet books saying that I have to forget about food for pleasure, and think of food only as energy. Bullshit. Food is a pleasure, God would not have bothered giving me taste buds if I wasn’t supposed to enjoy my food. I also think that it is OK to use food to soothe raw emotions, to help when your sick, and to satisfy.

I am elarning I can do ALL of thes things with healthy, nourishing, whole foods. It is an adjustment, and not always an easy one. But in time you can do it. You can find almost any version fo your favorite comfort food in a healthier version. If I really, really want fries. I buy low fat frozen ones and have 14 or so, usually slightly over a hundred calories. If I want pizza, I either put toppings on pita, tortilla, or homemade healthy crust with lower fat toppings and bake it. Now this is not all the time. It happens maybe once a week, if that. I just want something extra tasty.

Which reminds me, I have a great recipe for Philly Cheese Steak Sandwich which is yummy and lesser calories.

Now, tiny squares of dark chocolate can be a God-Send. I always keep one on hand if I know chocolate or any sweet desserts are going to be served. You should get 70% or more in your dark chocolate.

Meal 4- 1.2 cup lemon yogurt, 1 TBSP wheat germ, 1/2 oz walnuts

(this was so gooddd)

Meal 5- 2 oz extra lean ham slice, egg white, 2 red potatoes, parboiled and sauted in a bit of olive oil

Meal 6- 1 square dark Lindt chocolate (30 calories)

Pita Chips

Ohhhh, salt…my poison. Add crunch to that and I melt. I can’t have potato chips of course, so I knew I needed a substitute ( yes, fulfilling your cravings in a healthy way is the way to go.

I recently watched “What  the Bleep Do We Know” it is a documentary talking about quantum physics for the layman. it is fascinating.  If you are a fan of The Secret you will really love it as well. (How the hell do I make link within my  posts??? Someone leave a comment and let me know). But I digress. It also gives a great explanation and visual on addiction, whether its to food, emotion, whatever. If you can get your hands on a copy, it is worth watching. It dicusses how if one can stay away from their poison of choice, gradually your brain will begin to rewire to reduce cravings. Facinating stuff.

 I have been doing very well in my eating and workouts and will begin posting daily over next couple days.

Oh ya, Pita Chips

pita bread

spray olive oil

basil

seasoned salt, or garlic salt

Cut your pitas in half, than each half into 3 equal triangles. Now gently tear each triangle in half so there is just one layer.

Spray cookie sheet, lay pita chips rough side up. Sprinkle with seasoned or garlic salt and basil.

(You can also try a italian seasoning and parseman cheese combo with a dilly of salt..yum)

Bake at 400 for 5 minutes. Keep an eye. They should be just slight brown on edges and crispy. If they get brown all over. They can be pretty tasteless.

Meal 1- 1 toast and 1TBSB natural peanut butter,a a few blackberries

Meal 2- 1/2 cup cottage cheese, 1 tsp. Strawberry Crystal Lite crystals

Meal 3- Egg salad with nonfat mayo, on one peice muti-grain bread, variety od crudites

I have blamed carbs alot for weight gain, not totally. much belongs to fast food addiction. But I have been brainwashed that most carbs are bad. Bull shit. When I was a teenager, I ate what my mother cooked. Cereal and fruit for breakfast, chicken sandwich on TWO pieces bread, and for supper I had meat potatoes and vegies.

I WAS AN IDEAL WEIGHT! Ya, i know we get older our metabolism slows and as a teen I walked everywhere. But nonetheless, I was healthy, energetic and felt good. When I look at this diet, I see it is practically the Food Guide standards. Imagine. I already knew how to eat. A few grains, meat, fruit, vegetables. Even dessert a couple times a week for supper. What else did I do then different than now? I never ate fast food other than once a month, I didn’t drink diet pop or regular, I ate home made meals. When I was hungry I ate, something good, maybe a little muffin (not the jumbos of today) .

Geez, maybe I have always known how to be healthy without starving. WOnder if I can return the 500 bucks of diet books I bought over the years.

Fruit and Yogurt Parfait And Summary

1/2 cup vanilla yogurt (lowfat, and low sugar)

2 TBSP. lowfat granola or toasted oatmeal for the purists

1 TBSP wheat germ

A few berries

Mix Granola and wheat germ together, layer each ingredient twice amd enjoyyyyyyyyy

Goal for next week is 90% eating clean, 3 weight and interval days. 6 walking.

To Salad or Not to Salad

You have to stay in shape. My grandmother, she started walking five miles a day when she was 60. She’s 97 today and we don’t know where the hell she is.

I used to hate salads, I think it was because my version of salads was iceberg or romaine, cukes, tomatoes and a bit of ranch dressing. Some might like it, I thought it was dreadful. My boo boo was not expanding my view.

Never put things you don’t like in your salads…never. Only put in vegies you like. Here’s my basic recipie, you’ll still lose weight (I’ve lost 30 so far eating these damn things)

Your bestest salad

Whatever veggies you like ( come on…broccoli, carrot, raw green beans,asparagus lightly steamed crisp and chilled, whatever, and even cukes if you like them)

2 -3 ounces chicken or lowfat beef strips, or lean ham

1oz low fat cheese ..feta..chedder…blue…mozza…etc.

1/8 cup fruit (berries, pomengrate, etc.)

1TBSP. nuts or seeds if you like

1 TBSP full fat dressing, or 2 TBSP low cal ….experiment! try that mandaring orange,,,poppyseed is yummy…..

My secret salads…I got to store…I buy a bag of greens, i buy omellette veggies already chooped in deli, cheese and dressing, plus some kind of berry. Take me 5 minutes to throw it together cause hard chopping work in done!  1 ounce chedder looks small. If you chopped it up in tiny sqaures, it’ll spread out all over and you’ll get a taste in every bite. Thats a big salad secret in keeping it low cal. Chop meat, cheese small. I get tons of compliments on my salads. And with a lot of fav foods, you will never miss bread or crackers….and you will be stuffed.

Look on interent, you’ll find lots of recipies for thigns that compliment each other, modify them to your taste, take away or add, and adjust measurements to this outline.
